I am so sick and tired of oatmeal for breakfast!
This Apple-Yogurt Parfait serves as a great start for the day or a sweet afternoon snack!
Apples are my favorite! They are loaded with fiber, natural sweetness, and are crispy. Nonfat Plain Greek yogurt is a staple in my house. You should make it one in yours as well. It is low in sugar and packed with protein. (I use it on sandwiches and with salsa, instead of sour cream) Flaxseeds are a good sources of fiber and Omega-3s. I sometimes skip the raisins all together or substitute them for raw walnuts.
BEWARE!!! Don't be fooled by fast food parfaits. Morning stops like McDonald's and Starbucks offer parfaits that are loaded with unnecessary fat and sugar hidden in the yogurt and so called healthy granola!
Ingredients (serves 4)
3 Honeycrisp or fuji apples, diced
3 cups nonfat plain Greek yogurt
1/2 cup ground flaxseeds
1/4 cup agave nectar or honey ...might not even need this much
3/4 cup golden raisins
optional: dash of Cinnamon for each (my favorite addition to everything)
Preparation
1. Set out 4 large wine or parfait glasses. In each, layer 1/4 apple, 1/4 cup yogurt, 2 teaspoons ground flaxseeds, 1 teaspoon agave nectar and 1 tablespoon raisins. Repeat all layers twice in each glass.

We've started making our own yogurt using skim milk. It's consistency is equivalent to milk with higher fat content (2% or whole), and it's less sweet and less slick than store-bought yogurt. I was never a fan of yogurt until I had the homemade stuff. We use it in frozen fruit smoothies (I prefer no sugar added but you can add 1 tbsp if you prefer sweeter), and in salad dressings (dijon mustard + yogurt + capers + garlic + dash of olive oil + blender/mixer = yummy).

Thanks Leah, T and I registered and received a yogurt maker when we married. Unfortunately we never used it, and ended up selling it in a yard sale...One of my many regrets in life. Ha!

I've been using soy yogurt in my morning smoothies. Do you know how this compares to greek yogurt? Is one better then the other?

Her "crack" is yogurt (and plain saltines)...ORGANIC yogurt that is ;) Yo Baby Yogurt, while organic & appears healthier at twice the price, it has the same sugar, calorie, fat & less fiber than the Dora yogurt.PS Boys brought home beef jerky tonight & I checked. . . NO Hydrogenated oils! Must be healthy, right? ;) Love you posts!
ReplyDeleteAnna, I haven't tried soy yogurt yet, but I have heard good things about it. It doesn't contain as much protein as the Greek yogurt, but it might be more gentle to your tummy if you're lactose sensitive. Check the sugar content also.
